Fab Squash

Who's cooking what and where? As the holiday season sneaks upon us one thing is for sure, I won't be attached to the kitchen. Not for very long that is. Here is another quick, easy and healty recipe I tried for T.G.,Baked Butternut Squash with Craisins and Spinach. My girlfriend "Chica" shared it with me and now I'm sharing it with you. It's real simple and takes no time. Just set it and forget it! To make, place the chopped squash on a baking sheet with a little olive oil and herb marinade, a dash of salt/pepper and red onions. Bake for about 20 mins. Remove, add some more marinade, craisins, fresh spinach and place in the oven again...just long enough for the spinach to welt. Remove, lightly stir and serve. Now I'll eat to that!
