Lunchtime...


Here's to another quickie in the kitchen. Today's recipe uses 3 main ingredients. Quinoa, Chick Peas and Tilapia. To prepare, use 1 cup quinoa to 2 cups of water. Add a veggie or chicken cube to the water for extra flavor. Cover, reduce flame and let it cook for about 15 to 20 minutes. Drain and rinse 1 can of chick peas. Sprinkle some Kosher salt and paprika, place on a shallow dish and bake for about 15 mins on 350. In a skillet with a little olive oil- saute some portabella mushrooms, orange bell peppers, and cherry tomatoes..set the mixture aside and reduce the flame under the skillet. Pour some apple cider vinegar on the thawed tilapia rinse and pat dry. Coat with a little olive oil and a few sprinkles of Kosher salt. In the same skillet add the fish and pan sear until flaky. Now your meal is ready to be served. Enjoy xo
